BLACK MOLE (8oz): The most representative and traditional mole of Oaxaca, includes more than 32 ingredients, including almonds, raisins, peanuts, chocolate, and banana among others. In Los Pacos the process of preparing this mole takes us 5 days, its flavor is the purest expression of the fusion of flavors of Mexican cuisine.
RED MOLE (8oz): Notes of cinnamon, cumin, raisins, and black pepper offer a slight heat that is a true treat for the tastebuds. Five days of preparation are needed to let the taste of the peanuts and almonds release just right.
Meet The Family
Back in the 60`s Don Francisco used to work for a big Mexican bread company where he oversaw the distribution throughout the state of Oaxaca, a state well Known for its wide ethnic diversity and complex orography, microclimates and vast in culture. He became spouse of Maria del Socorro at the age of 24 and two years they decided to start a family. When he retired from his job at Bimbo and with economical responsibility of raising four children at that time, he decided to open a small family restaurant or as we call them on México “Comedor Familiar Los Pacos” with all the knowledge acquired thought their trips and the recipes of Doña Coco´s Family with the Statement “We are going to make mole as my family did” consolidating all flavors and seasoning in their recipes.
